The griffon is the mount I use most (I don't have the skyscale yet) but the springer is the one I miss most when I'm playing other games. I think the jackal has the coolest lore behind it, and the skimmer is the one I find most original.

Getting them is easy, lvling up their masteries takes much longer. griffon starts after fully completing pof story. Mounts are enormous and ruin the aesthetic that people work for. As it currently stands, you have 7 pieces of armor and 1-2 weapons that define your character overall. You dye the armor to your liking and everything to personalize yourself. A Mount is bigger than all those pieces combined, and wrecks the whole aesthetic.
The quickest way to complete this is by riding around the top level of the structure collecting blue and orange orbs and then bringing them back to the heart NPC while on the Jackal mount. Killing the enemies above also gives a decent amount of progress. I did a mix of all the tasks to complete this quickly.
